Watermelon Gazpacho


In a 100 gram serving, watermelon fruit supplies 30 calories and low amounts of essential nutrients (table). Only vitamin C is present in appreciable content at 10% of the Daily Value (table). Watermelonpulp contains carotenoids, including lycopene. The amino acid citrulline is produced in watermelonrind.

INGREDIENTS

  • 1/2 small watermelon, rind removed
  • 1 red pepper, diced
  • 1/2 English cucumber
  • 1/2 cup sliced almonds
  • 1 clove garlic
  • 2-4 small tomatoes
  • Salt and pepper, to taste
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons extra-virgin olive oil
  • 4 ice cubes
  • Thinly sliced cucumber, to garnish

INSTRUCTIONS

  1. Add all ingredients to a blender. Pulse to combine until smooth. Taste and adjust seasonings as needed.
  2. Top with cucumber slices. Serve cold or at room temperature.
